Organic wine

Wine is an alcoholic beverage made from fermented grapes or other fruits. Due to the natural chemical balance, grapes ferment without the addition of sugars, acids, enzymes, water, or other nutrients. Yeast consumes the sugarin the grapes and converts it to ethanol and carbon dioxide. Different varieties of grapes and strains of yeasts produce different styles of wine. The well-known variations result from the very complex interactions between the biochemical development of the fruit, reactions involved in fermentation, terroir and subsequent appellation, along with human intervention in the overall process.

From 1 August 2012, thanks to the implementation of reg. ce 203/12, the wine made from organic farming can be labeled as organic wine whereas before it was necessary to write "wine made from organic grapes".

It is the only one of the three types of "bio" to have a standard and certification. The peculiarity of the organic wine when compared to conventional treatments is almost exclusively in the country, while those in the cellar the current legislation does not provide specific limitations on common procedures.

A summary of the characteristics of organic wine are:

• 1) processes of winemaking, whose requirements are approved by the Standing Committee on Organic Farming (SCOF), the Standing Committee for organic farming;

• 2) authorized logo to be affixed on the label;

• 3) number of conventional adjuvants reduced to less than half;

• 4) levels of sulfur dioxide in the bottled product reduced (currently 100 mg / l for red wines dry, and 150 for dry white wines);

• 5) in the countryside do not have to use synthetic chemicals (fertilizers, herbicides, fungicides, insecticides and pesticides in general) or GMOs

• 6) in the basement you can use the winemaking products and processes of vinification, maturation, aging, bottling authorized by the EC Regulation.

• 7) obtaining certification as for all organic products.

How to use and nutritional properties:

The wine is an excellent antioxidant, thanks to its ability to combat free radicals. This also results in a slowing aging and the growth of tumors. A glass of red wine contains 85% water, while the rest is made of carbohydrates, sugars, proteins, alcohol, mineral salts such as calcium, sodium, phosphorus, potassium, zinc, magnesium and fluorine. There are also some vitamins such as A, B1, B2, B3, B4, B6, K and J. The red wine, unlike white, contains concentrations 20 times more phenolic compounds, namely polyphenols.

Among the beneficial components of wine should fall certainly polyphenols; clinical trials of these drugs have the associated reduced risk of developing cancer or cardiovascular and neurodegenerative diseases.

The benefits of the polyphenols are  to be attributed to their ability to fight oxidative stress which is the basis of the pathologies mentioned above. The wine, according to studies completed or in progress, would be able to act positively against metabolic syndrome, diabetes, dementia and cancer.
