Marmalades are obtained from fresh, sound and ripe fruit, coming from the typical sites of growing. The precessing consists mainly in the concentration of fruit. The product has the typical colour of fruit, slighly brown for cane sugar. Its consistency is creamy, soft, easy to spread.

Fruit spreads are preserves of fruit with a low energy-giving content, suggested for hypocaloric or without saccharose diets. The product has the typical colour of fruit, clear and bright. The consistency is jellied in soft way to be spread. The fruit spread has a delicate taste, lively like the fresh fruit, and an irresistible smell.

How to use and nutritional properties:

Both the jam and marmalades are processed products (purification, husking and size), cooked (stewing fat) and kept under glass (vacuum) prior sterilization of the capsules restraining; in the past, marmalade and jam ensured the availability of fruit even in winter, when agricultural production was now over. Today, the production of jam and marmalade, in addition to being a good substitute of sweets, has the function of using the surplus production or supply, and to exploit also the fruit that, for decay or bruises, is no longer suitable for consumption in the form fresh.

Jam and marmalade are basically very sweet foods, although recently they have been put on the market some types diet, as without added sugar. Differently from the fresh fruit, due to the prolonged cooking, the jam and the marmalade are poor in vitamins and antioxidants. The amount of fiber and minerals remains almost unchanged, as well as that (even if trivial) of proteins and lipids.
